Pizza Sauce

Ingredients
3 Roma tomatoes (halved)
2-3 cloves of garlic
1/4 of a medium onion
Bunch of fresh basil leaves
2-3 fresh sage leaves
4 tbs tomato paste
1 tsp oregano (plus a sprinkle)
Salt and pepper to taste
Drizzle of olive oil
Directions:
Preheat your oven to 175 degrees Celsius
On a tray lined with parchment paper or aluminum foil, lay out the tomatoes, onion, and garlic cloves
Over top, add a drizzle of olive oil, salt and pepper, and sprinkle some oregano. Wrap the garlic cloves in another piece of aluminum foil, and roast the veggies for 25 minutes
When the veggies are done transfer them to a blender, and add in the tomato paste, fresh basil, fresh sage, ground oregano, and more salt and pepper to your liking
Blend everything up until the sauce is smooth, and let it cool a bit before using it on your pizza crust (you can freeze any extra sauce to use later)
