King Oyster Mushroom Lettuce Wraps

Sauce Ingredients 

3 tbs soy sauce

2 tbs of oyster sauce

1 tbs of sesame oil

1 tbs of rice vinegar

2 tbs peanut butter 

1 tbs honey 

1 tsp chili garlic sauce 

1/2 tsp cumin 

1/2 tsp garlic salt

1/2 tsp ginger powder

Lettuce Wrap Ingredients

4 cloves of garlic (minced)

1-2 tbs of sesame oil

1-2 chillies*

1 pack (200 grams) of king oyster mushrooms (finely chopped)** 

1 green pepper (diced)

Half an onion (chopped) 

Drizzle of olive oil 

Splash of water***

1 head of iceberg lettuce

Crushed peanuts, chopped green onion and 1-2 more chopped chilies for garnish (optional) 

Directions:

  • Prepare the sauce by mixing together all the sauce ingredients together in a bowl and set aside

  • Drizzle sesame oil on a skillet over medium heat and let it warm up for a couple minutes. Add in the onion and the garlic and the chopped chilies if using. Cook everything together for a few minutes until the onion is translucent and garlic is fragrant

  • Add the king oyster mushrooms to the skillet and stir everything together. Cover and cook for 5-8 minutes

  • Add in the green pepper and stir everything together. Cover and cook for another few minutes

  • Add in the sauce to your vegetables, making sure to coat everything evenly. Here, you can add a little bit of water if the sauce is too thick. Cover and cook for another couple minutes

  • Assemble your lettuce wraps: rip off a layer of iceberg lettuce and add a couple of spoonfuls of the mixture on top. Garnish as desired, and enjoy!

Notes

  • *Omit the chillies if you don’t want it to be too spicy

  • **King oyster mushrooms are a great substitute for ground meat because of their meaty texture. These are my favourite mushrooms to use in this dish, as lettuce wraps are usually made with ground chicken/beef/etc. You could use another mushroom if you don’t have king oyster, but the texture won’t resemble ground meat

  • ***You might not need the water if the sauce is distributing evenly with the lettuce wrap filling
